Watford Observer Competition Prize Cake, October 2011

Kate and Jamie had a polka dot and blue theme for their wedding, and the task was to come up with a modern design that incorporated these two key elements. Contemporary cakes for the past few years have been getting taller, and the bottom tier was made to an exaggerated height of 7 inches, with the other tiers becoming gradually less tall, but all incorporating the polka dots theme. The bottom tier was made from Chocolate Sponge with Chocolate ganache, with the middle tier in Lemon Sponge and the top tier in Vanilla Sponge. Overall the cake looked stunning, taking pride of place behind the top table.
